Hello Beautiful People! The other night, Vic decided to make peach cobbler for the very first time — and let me tell you, it was epic. I mean, I’ve made my fair share of the quick “dump cake” style cobblers before, and sure… they’re sweet and easy. But this? This was next-level.

Picture this:
Vic hunkered over the stove, peeling and slicing fresh peaches — five of them, to be exact — all while his back was out. We recently moved upstairs and got a new mattress, and apparently his back is still deciding how it feels about the change. But even with the aches, he was determined.

There he was
Patiently prepping every slice, melting butter, whisking the batter, and layering it all together. No shortcuts, no cans, no dumping. Just the real deal. And you know what? It paid off.

Easy Peach Cobbler
Ingredients
For the FIlling:
- 5 peaches peeled, cored, sliced (about 4 cups / 600–700g)
- ¾ cup sugar 150g
- ¼ tsp salt
Batter:
- 6 Tbsp butter 85g
- 1 cup flour 120g
- 1 cup sugar 200g
- 2 tsp baking powder
- ¼ tsp salt
- ¾ cup milk 180ml
- Ground cinnamon for sprinkling
Instructions
- Preheat oven to 350°F / 175°C.
- Toss peaches with sugar + salt. Set aside.
- Melt butter in a baking dish.
- In a bowl: mix flour, sugar, baking powder, salt, and milk until smooth.
- Pour batter over melted butter (don’t stir!).
- Spoon peaches + juices on top.
- Sprinkle with cinnamon.
- Bake 40–45 min until golden and bubbly. Serve warm with ice cream.
The crust
Came out golden and crisp, with that perfect buttery crunch on top that you just don’t get from the dump-and-go version. The peaches were tender, naturally sweet, and had just the right hint of cinnamon. It was everything a summer dessert should be — warm, cozy, and just a little bit rustic.

I honestly don’t think I can go back to the shortcut method after this. Sometimes, slowing down and making it from scratch is exactly what you need… even if your back disagrees.
